We choose only healthy and fresh olives. We choose olive trees located 200-300 meters above sea level and surrounded by the sea. We choose only producers with long experience in harvesting by hand, using only jute sacks. We choose the perfect method of extraction - cold extraction at super low temperatures using a three phase extraction system. We choose stainless steel, temperature controlled tanks.
