Rufina Maguey Silvestre is a sustainable mezcal producer based in Oaxaca, Mexico. We craft our artisanal mezcal using time-honored traditions and sustainable practices, prioritizing the health of the agave and the surrounding ecosystem. Our commitment to preserving the Sierra Sur’s unique environment and supporting the local community is at the heart of everything we do. We utilize traditional methods like the use of a stone tahona for milling and wood-fired distillation to ensure a truly authentic and flavorful mezcal. Craftsmanship and sustainability are key to our process.

Our journey begins with selecting agaves, nurtured for eight years under the Oaxacan sun, absorbing the nutrients of the earth. We then carefully harvest the hearts of the agave, cooking them in traditional stone ovens to unlock their rich flavors. This process is followed by a meticulous milling using a stone tahona, a system passed down through generations, and a natural fermentation process.
