Formed in June 1993, the Welsh Culinary Association now re-branded and known as the Culinary Association of Wales exists to promote excellence in the art of professional cookery within Wales.

After many years of strenuous lobbying, supported by political leaders in Wales, the Culinary Association of Wales took a huge step forward when it was granted membership of the prestigious World Association of Chefs’ Societies (WACS) at the 30th World Congress in Kyoto, Japan in March 2002.
The decision meant that, for the first time, Wales could proudly fly the Welsh flag and compete as a nation in its own right, after eight years of competing as a region of Great Britain. As a consequence, the Association was also able to form a junior team to compete on the world stage, which was a major boost for the development and natural progression of young chefs in Wales.

On a warm summer evening of 2018, one of our company founders, Chef Nitisha, was sat on the balcony of her rented 1 bedroom London flat eating a bowl of her mum’s Dhal and rice.
All it took was for 1 spoonful, for Nitisha to be transported back to her childhood. As a child, no Saturday was complete without Dhal Bhaath- fragrant Basmati rice served with a flavoursome, aromatic and soul hugging, hearty lentil soup.
Reminded of her love for dhal, not long after the trip down memory lane, Nitisha had signed a contract with publishers Ryland Peters & Small Ltd for her second cookery book, The Delicious Book Of Dhal.
A vegan and vegetarian cookery book concept showcasing lentils as the focal ingredient for starters, snacks, main meals and desserts.
Given the popularity of her dhal and plant based recipes, Nitisha wanted to explore how she can take the concept to the next level. Which is when and how Dhalings was born.
Dhalings is a revolutionary take away food brand pioneering plant based South Asian meals.
The menu prides itself on fresh, fun, exciting, casual, informal, street food style dining. Food that takes you on a journey from the comfort of your own home.
Years in the making, Dhalings has been on quite a journey, and after perfecting our family favourite recipes, we are ready to take you on a culinary adventure with us.

Wee in size, big in heart! Having struggled to find a decent, "family friendly, slightly coolish coffee house", to go to when our kids were born, we took the plunge and decided in 2004 between our other "day-jobs" (my background was in retail and my husband's was in photography) to open our very own. I say "house" in the lightest sense of the word because we're not quite sure what to call ourselves - coffee bar, bistro, coffee house, restaurant, cafe - have all been used to describe us in the past, and somehow, they all seem to fit. What we do know is that our secret seems to be that we're a little bit of all those things and so we usually end up just calling ourselves, "D'nisi".
Our concept was to set a new standard of coffee house in Scotland, serving a wonderful range of espresso based coffees, freshly prepared foods & soups and utterly amazing scones. We wanted to prove to some of the big boys that us locals, whilst "wee-er", could do it just as well, if not better, than them! It’s a wee bit of a Scottish chip on our shoulder, to prove that we can do everything on our own or better.
We spent months and months testing coffees, food, cakes, ice creams etc, and at the end of it, apart from our additional few pounds in weight, we knew we'd struck gold with our amazing espresso coffee... who has become the real star of our show! Whilst both coffee fanatics, my husband is also fanatical about food tasting fresh and looking great and I'm fanatical about standards, detail and design, so together I guess that makes us fanatics for great service - which is great news for our customers!
